Creamy Mushroom Mediterranean Pasta Bake

Last weekend, I was in the mood for something warm and comforting, but I still wanted plenty of vegetables and Mediterranean flavor. I had mushrooms, pasta, spinach, and a few simple ingredients in the kitchen, so I decided to turn them into a creamy baked pasta.

The smell while it was baking was incredible. Once the cheese turned golden and bubbly, everyone was ready for dinner. The creamy mushrooms, garlic, herbs, spinach, and feta came together beautifully, and it quickly became one of those cozy recipes I know I’ll make again.

Ingredients

  • 12 oz pasta, such as penne or rigatoni
  • 2 tbsp olive oil
  • 12 oz mushrooms, sliced
  • 4 garlic cloves, minced

  • 3 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 tsp dried oregano

  • ½ tsp black pepper
  • ½ tsp salt
  • 4 oz cream cheese, softened
  • ½ cup plain Greek yogurt
  • ½ cup vegetable or chicken broth
  • ½ cup crumbled feta cheese
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 tbsp fresh parsley, chopped

Instructions

1. Cook the Pasta

Preheat the oven to 375°F (190°C).

Cook the pasta in salted water until just al dente according to the package directions. Drain, reserving about ½ cup of the pasta water.

2. Cook the Mushrooms

Heat olive oil in a large skillet over medium-high heat.

Add the onion and mushrooms and cook for 6–8 minutes, stirring occasionally, until the mushrooms are golden and most of their moisture has cooked away.

Add the garlic and cook for another 30 seconds.

3. Add the Vegetables

Stir in the spinach and cherry tomatoes. Cook for 2–3 minutes, until the spinach wilts.

Add oregano, Italian seasoning, black pepper, and salt.

4. Make It Creamy

Reduce the heat to low. Stir in the cream cheese, Greek yogurt, and broth.

Mix until smooth and creamy. If the sauce is too thick, add a little reserved pasta water.

5. Combine

Add the cooked pasta to the skillet and toss until everything is evenly coated.

Fold in the feta and Kalamata olives if using.

6. Bake

Transfer the pasta mixture to a greased baking dish.

Sprinkle the mozzarella and Parmesan evenly over the top.

Bake uncovered for 20–25 minutes, until hot and bubbling and the cheese is golden.

For an extra golden top, broil for 1–2 minutes at the end, watching carefully.

7. Finish & Serve

Let the pasta bake rest for about 5 minutes before serving.

Sprinkle with fresh parsley and a little extra feta if desired.
