Ingredients

  • 4 medium sweet potatoes
  • 2 cups fresh spinach, chopped
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • ½ cup shredded mozzarella

Instructions

1. Bake the Sweet Potatoes

Preheat the oven to 400°F (200°C).

Wash and dry the sweet potatoes. Pierce each one several times with a fork and place them on a baking sheet.

Bake for 45–60 minutes, depending on their size, until they are completely tender when pierced with a knife.

2. Prepare the Spinach Filling

While the potatoes are baking, heat olive oil in a skillet over medium heat.

Add the garlic and cook for about 30 seconds. Add the chopped spinach and cook for 2–3 minutes, until wilted.

Remove from the heat and stir in the oregano, black pepper, salt, and lemon juice.

3. Prepare the Sweet Potatoes

Allow the baked potatoes to cool for a few minutes. Carefully make a deep slit lengthwise in each potato without cutting all the way through.

Gently press the sides open.

Scoop out some of the soft sweet potato flesh, leaving enough inside to keep the potato shell sturdy.

4. Make the Filling

Add the scooped sweet potato flesh to a bowl.

Mix it with the cooked spinach, half of the mozzarella, half of the feta, and the dried cranberries.

For extra crunch, stir in the chopped walnuts or pecans.

5. Stuff the Potatoes

Spoon the mixture back into the sweet potato shells, gently packing it in.

Top with the remaining mozzarella and feta.

6. Bake Again

Return the stuffed potatoes to the oven and bake for 10–15 minutes, until the cheese is melted and lightly golden.

7. Finish & Serve

Remove from the oven and sprinkle with fresh parsley and a few extra dried cranberries.

Serve warm.
