There’s something special about a dinner that practically takes care of itself, and Shrimp, Corn, Potatoes & Smoked Sausage Foil Packs have become one of my favorite easy meals for busy weekends.

I made these for my family last weekend when I wanted something hearty without spending the whole evening in the kitchen. A friend had suggested trying shrimp and potatoes together in foil packs, and I decided to add sweet corn, smoked sausage, garlic, and a few herbs.

I wrapped everything up, popped the packets in the oven, and waited. When I opened the first one, the steam carried the most amazing buttery garlic aroma. The potatoes were tender, the shrimp were juicy, the corn was sweet, and the sausage added just the right smoky flavor.

Ingredients
1 lb large shrimp, peeled and deveined
1 lb baby potatoes, halved
2 ears fresh corn, cut into 1-inch pieces, or 2 cups frozen corn
12 oz smoked sausage, sliced into rounds
1 small red bell pepper, sliced
1 small yellow onion, sliced
3 cloves garlic, minced
3 tablespoons extra virgin olive oil or melted butter
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt, or to taste
½ teaspoon crushed red pepper flakes, optional
1 tablespoon fresh parsley, chopped
1 tablespoon fresh lemon juice
Lemon wedges, for serving
Instructions
1. Prepare the Oven

Preheat your oven to 425°F (220°C).

Cut four large sheets of heavy-duty aluminum foil.

2. Cook the Potatoes First

Because potatoes take longer to cook than shrimp, place the halved potatoes in a microwave-safe bowl with 2 tablespoons of water.

Cover loosely and microwave for 4–5 minutes, just until they begin to soften.

Drain and pat dry.

3. Make the Seasoning

In a small bowl, combine the olive oil or melted butter, minced garlic, smoked paprika, oregano, garlic powder, black pepper, salt, and red pepper flakes.

Mix well.

4. Assemble the Foil Packs

Divide the potatoes, corn, smoked sausage, bell pepper, and onion among the four foil sheets.

Drizzle with about two-thirds of the seasoned oil mixture and toss gently.

Place the shrimp on top and drizzle with the remaining mixture.

5. Seal the Packets

Bring the long sides of the foil together and fold tightly.

Fold the ends underneath to create sealed packets.

Place them on a large baking sheet.

6. Bake

Bake for approximately 20–25 minutes, or until the potatoes are tender and the shrimp are pink and cooked through.

Carefully open one packet to check the potatoes before serving—the steam will be very hot.

7. Finish

Open the packets and drizzle with fresh lemon juice.

Sprinkle with chopped parsley.

Serve with lemon wedges.

My Tips for Perfect Foil Packs

Partially cook the potatoes first. This keeps the shrimp from becoming overcooked while waiting for the potatoes.

Don’t overcook the shrimp. As soon as they’re pink, opaque, and curled into a loose “C” shape, they’re ready.

Seal the foil well. A tight seal helps trap the flavorful steam inside.

Use heavy-duty foil. It makes handling the packets much easier.

Add lemon at the end. Fresh lemon gives the buttery, smoky flavors a bright finish.

Mediterranean-Inspired Twist

For a Mediterranean-style version, use olive oil instead of butter and add:

Parsley
Lemon zest
Cherry tomatoes
Red onion
Kalamata olives

You can also replace some of the potatoes with zucchini or bell peppers for a lighter vegetable-forward packet.
