Crispy Potato Stack Towers Layered with Parmesan

Golden, crispy on the outside, tender in the middle, and packed with savory Parmesan flavor, these Crispy Potato Stack Towers are such a fun way to turn simple potatoes into something special.

I made these for my family last weekend when I wanted a side dish that felt a little different from our usual roasted potatoes. A friend had mentioned making thinly sliced potatoes with Parmesan, so I decided to give it a try.

As they baked, the kitchen smelled amazing. The Parmesan became beautifully golden and crisp around the edges, while the thin potato layers softened and held together perfectly. Everyone loved them, and honestly, they looked so pretty on the table that I almost didn’t want to cut into them!

This is one of those recipes I enjoy making on weekends when I have a little extra time and want an ordinary dinner to feel special.

Ingredients
4 large Yukon Gold or russet potatoes
¾ cup freshly grated Parmesan cheese
3 tablespoons melted butter
2 tablespoons olive oil
2 cloves garlic, finely minced
1 teaspoon Italian seasoning
½ teaspoon smoked paprika
½ teaspoon black pepper
¼ teaspoon salt
2 tablespoons fresh parsley, chopped
Extra Parmesan, for topping
Instructions
1. Prepare the Potatoes

Preheat the oven to 400°F (200°C).

Peel the potatoes if desired and slice them very thinly, about ⅛ inch thick. A mandoline slicer makes this much easier and helps keep the slices uniform.

Pat the slices dry with paper towels.

2. Make the Parmesan Mixture

In a small bowl, combine the melted butter, olive oil, garlic, Italian seasoning, smoked paprika, black pepper, and salt.

Mix well.

3. Layer the Potatoes

Lightly grease a muffin tin or small oven-safe ramekins.

Place one potato slice into each section.

Brush lightly with the butter mixture and sprinkle with a little Parmesan.

Add another potato slice and repeat the layers until each stack is several slices high.

Finish each tower with extra Parmesan.

4. Bake

Cover loosely with foil and bake for 25 minutes.

Remove the foil and continue baking for another 20–25 minutes, or until the potatoes are tender and the tops are deeply golden and crispy.

5. Make Them Extra Crispy

For an extra-golden finish, turn the oven to broil for 1–2 minutes at the end.

Watch them closely because Parmesan can brown quickly.

6. Rest and Serve

Let the potato towers rest for about 5 minutes before carefully removing them from the pan.

Sprinkle with fresh parsley and a little extra Parmesan.

Serve warm.

My Tips for Perfect Potato Towers

Slice the potatoes thinly and evenly. This is the key to getting tender layers without burning the outside.

Use freshly grated Parmesan. It melts and crisps beautifully.

Don’t skip drying the potatoes. Too much moisture can prevent the edges from becoming crispy.

Don’t overfill the muffin cups. The potatoes soften and shrink slightly as they cook.

Let them rest before removing them. This helps the stacks hold their shape.

Air Fryer Option

You can also make smaller potato stacks in the air fryer.

Layer the potato slices with Parmesan and seasoning in small oven-safe cups or silicone molds.

Air fry at 375°F (190°C) for about 18–25 minutes, checking occasionally until the potatoes are tender and the tops are golden.

Cooking time will vary depending on the thickness of the potato slices and your air fryer.

Lower-Carb Option

For a lower-carb variation, replace part of the potato with thinly sliced zucchini or eggplant.

You can also make smaller stacks using:

Zucchini
Cauliflower
Turnips
Celeriac

Keep the Parmesan and herb seasoning for that same crispy, savory finish.

Easy Variations
Garlic Parmesan

Add extra minced garlic and fresh parsley.

Cheesy Potato Towers

Add a small amount of shredded mozzarella between some of the layers.

Rosemary Parmesan

Replace the Italian seasoning with fresh rosemary.

Spicy Potato Stacks

Add red pepper flakes or a pinch of cayenne.

Mediterranean Style

Use olive oil, garlic, oregano, Parmesan, fresh parsley, and a little lemon zest.

What to Serve With Them

Grilled chicken
Baked fish
Steak
Roasted vegetables

Green beans
Fresh garden salad
Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Frequently Asked Questions

Can I prepare these ahead of time?
Yes. You can slice and season the potatoes several hours ahead and keep them refrigerated until ready to bake.

What potatoes work best?
Yukon Gold potatoes give you creamy centers, while russet potatoes produce especially crispy edges.

Can I make these without a muffin tin?
Yes. Build small stacks directly on a parchment-lined baking sheet and secure them with toothpicks if needed.

Why aren’t my potato stacks crispy?
Make sure the potato slices are thin and dry, avoid overcrowding, and give them enough time uncovered at the end of cooking.

Can I freeze them?
They are best fresh, but leftovers can be frozen. Reheat them directly in the oven or air fryer to restore some crispness.
