Tender Chicken Breasts Filled with Creamy Spinach, Garlic & Cheese!
Tender Chicken Breasts Filled with Creamy Spinach, Garlic & Cheese
Last weekend, I wanted something comforting but still simple enough for a family dinner, so I made these creamy stuffed chicken breasts. A friend had suggested adding garlic and spinach to the filling, and I knew I had to try it.
The chicken turned out incredibly tender, with a creamy, cheesy center that everyone loved. It’s one of those recipes that looks fancy on the plate but is actually very easy to make at home.
Why You’ll Love This Recipe
- Juicy, tender chicken with a creamy filling
- Packed with spinach, garlic, and melted cheese
- High in protein and perfect for a family dinner
- Easy enough for a busy weeknight
- Delicious with vegetables, salad, or roasted potatoes
Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
For the Creamy Spinach Filling
- 2 cups fresh spinach, chopped
- 4 oz cream cheese, softened
- ½ cup shredded mozzarella
- ¼ cup grated Parmesan
- 3 garlic cloves, minced
- 1 tbsp olive oil
- ¼ tsp Italian seasoning
- ¼ tsp black pepper
- Pinch of salt
Instructions
1. Prepare the Filling
Heat olive oil in a skillet over medium heat. Add the minced garlic and cook for about 30 seconds.
Add the chopped spinach and cook until wilted. Remove from the heat and let it cool slightly.
Mix the spinach with cream cheese, mozzarella, Parmesan, Italian seasoning, black pepper, and a small pinch of salt.
2. Prepare the Chicken
Pat the chicken breasts dry. Carefully cut a pocket horizontally into the thickest part of each breast, being careful not to cut all the way through.
Season the chicken inside and outside with olive oil, Italian seasoning, paprika, garlic powder, salt, and black pepper.
3. Stuff the Chicken
Divide the creamy spinach mixture evenly between the chicken breasts. Gently press the opening together.
If needed, secure the edges with toothpicks.
4. Cook
Heat a little olive oil in an oven-safe skillet over medium-high heat.
Sear the stuffed chicken for about 2–3 minutes per side until golden.
Transfer the skillet to a preheated 375°F (190°C) oven and bake for approximately 18–25 minutes, depending on the thickness of the chicken.
The chicken should reach 165°F (74°C) in the thickest part.
5. Rest & Serve
Let the chicken rest for 5 minutes before slicing. This helps keep the juices inside and gives the cheesy filling time to settle.
Serve warm with roasted vegetables, steamed broccoli, a fresh salad, or cauliflower mash.
My Tips
- Use room-temperature cream cheese so the filling mixes easily.
- Don’t overstuff the chicken or the filling may leak during cooking.
- Searing first gives the chicken a beautiful golden crust.
- Always check the internal temperature rather than relying only on cooking time.
- Let the chicken rest before cutting for a juicier result.
Easy Variations
Extra Cheesy: Add more mozzarella or a little shredded cheddar.
Mediterranean Style: Add chopped sun-dried tomatoes, feta, and a little oregano to the filling.
Low-Carb: Serve with roasted zucchini, asparagus, cauliflower, or a green salad.
Spicy: Add red pepper flakes or a pinch of cayenne to the filling.
Serving Ideas
These stuffed chicken breasts are delicious with roasted asparagus, garlic green beans, broccoli, zucchini noodles, cauliflower mash, or a simple cucumber-tomato salad.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave until warmed through. Avoid overheating, as the chicken can become dry.

Frequently Asked Questions
Can I use frozen spinach?
Yes. Thaw it completely and squeeze out as much excess water as possible before mixing it into the filling.
Can I prepare this ahead of time?
Yes. Stuff and season the chicken several hours ahead, cover, and refrigerate until ready to cook.
What cheese works best?
Mozzarella gives a great melt, while Parmesan adds extra flavor. Cream cheese makes the filling rich and creamy.
Can I make this without cream cheese?
Yes. You can use ricotta or a mixture of Greek yogurt and shredded cheese for a lighter filling.
