Spicy Cucumber, Tomato & Onion Salad!
Spicy Cucumber, Tomato & Onion Salad
Some recipes are so simple that you almost forget how delicious they can be. I made this crunchy cucumber salad last weekend when I wanted something fresh and colorful to serve alongside dinner, and it disappeared from the table much faster than I expected.
A friend had recommended adding plenty of fresh chili, herbs, and a little sesame to the dressing, so I gave it a try. The combination of crisp cucumbers, juicy tomatoes, sweet-tangy onions, and that little spicy kick was amazing. It’s now one of those recipes I make whenever I want something quick, refreshing, and full of flavor.
Why You’ll Love This Recipe
- Fresh, crunchy, and colorful
- Takes only about 15 minutes to prepare
- Sweet, tangy, garlicky, and slightly spicy
- Great as a side dish or light lunch
- Easy to customize with your favorite vegetables
Ingredients
For the Salad
- 3 medium cucumbers, sliced
- 2 medium tomatoes, chopped
- ½ red onion, thinly sliced
- 1–2 fresh red chilies, thinly sliced
- 2 tbsp fresh cilantro or parsley, chopped
- 1 tbsp sesame seeds
- 1 garlic clove, finely minced
For the Dressing
- 2 tbsp olive oil
- 1½ tbsp rice vinegar or apple cider vinegar
- 1 tbsp fresh lemon juice
- 1 tsp honey or maple syrup
- 1 tsp soy sauce
- ½ tsp toasted sesame oil
- ¼ tsp black pepper
- ¼ tsp red pepper flakes, optional
- Salt, to taste
Instructions
1. Prepare the Vegetables
Wash the cucumbers and tomatoes well. Slice the cucumbers into rounds or half-moons and chop the tomatoes into bite-sized pieces.
Thinly slice the red onion and fresh chilies.
2. Make the Dressing
Add olive oil, vinegar, lemon juice, honey, soy sauce, sesame oil, minced garlic, black pepper, and red pepper flakes to a small bowl.
Whisk until well combined.
3. Combine Everything
Place the cucumbers, tomatoes, onion, chilies, and fresh herbs in a large bowl.
Pour the dressing over the vegetables and gently toss everything together.
4. Finish
Sprinkle sesame seeds over the top and give the salad one final gentle toss.
Let it sit for 10–15 minutes before serving so the vegetables can absorb the flavors.
My Tips
- Use firm, crunchy cucumbers for the best texture.
- If your tomatoes are very juicy, remove some of the seeds to prevent the salad from becoming watery.
- For less heat, remove the seeds from the chilies.
- Don’t add too much salt too early because the vegetables will release moisture.
- For extra crunch, add toasted peanuts or cashews.
Easy Variations
Creamy Version: Add a spoonful of Greek yogurt to the dressing.
Mediterranean Style: Replace soy sauce and sesame oil with feta, oregano, and a little extra lemon juice.
Extra Spicy: Add sliced jalapeños or more red pepper flakes.
Protein-Packed: Add grilled chicken, boiled eggs, chickpeas, or tuna to turn it into a complete meal.
Serving Ideas
This salad is wonderful alongside grilled chicken, fish, steak, burgers, rice dishes, or roasted vegetables. I also love eating it straight from the bowl for a light afternoon meal.
Storage
For the best crunch, enjoy it the same day. If storing leftovers, keep them refrigerated in an airtight container for up to 2 days. The cucumbers and tomatoes will become softer as they sit.
