How to Make This Easy Potato Roll

1. Cook the Potatoes

Peel the three potatoes and cut them into small pieces.

Place them in a pot of salted water and boil until they’re completely tender, about 10–15 minutes.

Drain them well. I usually let them sit for a minute or two after draining because excess water can make the potato mixture too soft.

2. Mash the Potatoes

Transfer the hot potatoes to a large bowl and mash until mostly smooth.

For an even darker top, place it under the broiler/grill for the final 1–2 minutes. Keep a close eye on it because cheese can go from beautifully golden to burnt surprisingly quickly!

Let the potato roll rest for about 5 minutes before slicing.

Then cut it into thick pieces and serve.


Cooking Tips for the Best Potato Roll

1. Don’t make the potato mixture too wet

This is probably the most important tip. Drain the potatoes thoroughly before mashing. Watery potatoes can make the roll difficult to shape.

2. Use parchment paper

I wouldn’t skip this. The parchment makes spreading, rolling, and transferring the potato mixture much easier.

3. Don’t overfill it

It’s tempting to add lots of cheese, but too much filling can cause the roll to split. A moderate layer gives you plenty of cheesy flavor without making it fall apart.

4. Chill the mixture if necessary

If your potatoes are particularly soft, put the spread-out potato layer in the refrigerator for 10–15 minutes before adding the filling. It will be easier to handle.
