Blackened Fish & Rice Stack

There’s something about a beautifully seasoned piece of fish served over warm, fluffy rice that makes dinner feel a little more special without being complicated.

½ teaspoon dried thyme
½ teaspoon black pepper

1 tablespoon fresh lemon juice
For the Rice
2 cups cooked white or brown rice
1 tablespoon butter or olive oil
1 tablespoon fresh parsley, chopped
1 tablespoon lemon juice
Salt and pepper, to taste
For the Toppings
½ cup diced cucumber
½ cup diced tomatoes
¼ cup finely diced red onion
1 tablespoon fresh parsley
Lemon wedges
Optional Creamy Sauce
½ cup Greek yogurt
1 tablespoon lemon juice
1 small garlic clove, minced
1 tablespoon chopped parsley
Salt and pepper, to taste
Instructions
1. Season the Fish

Pat the fish fillets dry with paper towels.

Combine the paprika, smoked paprika, garlic powder, onion powder, oregano, thyme, black pepper, cayenne, and salt in a small bowl.

Brush the fish with olive oil and coat generously with the seasoning mixture.

2. Cook the Fish

Heat a large skillet over medium-high heat.

Add a little olive oil and place the seasoned fish in the hot skillet.

Cook for about 3–5 minutes per side, depending on the thickness of the fillets.

The outside should develop a dark, flavorful crust while the inside becomes tender and flaky.

Finish with fresh lemon juice.

3. Prepare the Rice

Warm the cooked rice and stir in butter or olive oil, lemon juice, parsley, salt, and pepper.

Fluff gently with a fork.

4. Make the Sauce

Mix Greek yogurt, lemon juice, garlic, parsley, salt, and pepper in a small bowl.

Taste and adjust the seasoning.

5. Build the Rice Stack

For a beautiful presentation, place a little cooked rice into a small bowl or measuring cup and gently press it down.

Turn it upside down onto the serving plate to create a neat rice stack.

Place a blackened fish fillet on top or alongside the rice.

Add cucumber, tomatoes, and red onion around the plate.

Drizzle with the creamy sauce and finish with fresh parsley and lemon.

My Tips for the Best Blackened Fish

Dry the fish well. This helps the seasoning stick and gives you a better crust.

Get the pan hot before adding the fish. A properly heated skillet helps create that signature blackened exterior.

Don’t move the fish too much. Let it cook undisturbed so the seasoning can develop a beautiful crust.

Use fresh lemon at the end. The acidity balances the smoky spices perfectly.

Watch the heat. Blackened seasoning should become deeply browned, but it shouldn’t turn into burnt, bitter spices.
