Creamy Chicken & Mushroom Puff Pastry Bake!
Creamy Chicken & Mushroom Puff Pastry Bake
Last weekend, I was craving something warm and comforting that felt a little more special than an ordinary chicken dinner. I had chicken, mushrooms, and some puff pastry in the fridge, so I decided to turn them into a creamy baked dish. The golden pastry came out beautifully flaky while the filling underneath was rich, creamy, and full of garlic and herb flavor.
Everyone loved the contrast between the crisp pastry and the creamy mushroom filling. It felt like the kind of cozy meal you would order at a little restaurant, but it was surprisingly easy to make at home.

- Beautiful straight from the oven
Ingredients
For the Chicken & Mushroom Filling
- 1½ lb boneless, skinless chicken breasts or thighs, cut into bite-size pieces
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz mushrooms, sliced
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1½ cups chicken broth
- ½ cup heavy cream
- ½ tsp dried thyme
- ½ tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped
- ½ cup frozen peas, optional
For the Pastry
- 1 sheet puff pastry, thawed
- 1 egg
- 1 tbsp water
- 1 tbsp grated Parmesan, optional
- Pinch of dried thyme
Instructions
1. Prepare the Chicken
Season the chicken pieces with paprika, salt, and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5–7 minutes, stirring occasionally, until lightly browned and nearly cooked through.
Transfer the chicken to a plate and set aside.
2. Cook the Mushrooms
In the same skillet, add the butter.
Add the mushrooms and onion and cook for 5–7 minutes, until the mushrooms have released their moisture and started to turn golden.
Add the garlic and cook for another 30–60 seconds, until fragrant.
3. Make the Creamy Sauce
Sprinkle the flour over the mushroom mixture and stir for about 1 minute.
Slowly pour in the chicken broth while stirring constantly to prevent lumps.
Add the heavy cream, thyme, Italian seasoning, salt, and black pepper.
Simmer for 3–5 minutes, stirring occasionally, until the sauce thickens.
4. Add the Chicken
Return the chicken to the skillet and stir it into the creamy mushroom sauce.
If using peas, add them now.
Cook for another 2–3 minutes, then stir in the fresh parsley.
Remove from the heat.
5. Assemble the Bake
Preheat the oven to 400°F (200°C).
Transfer the creamy chicken and mushroom mixture to a baking dish.
Roll out the puff pastry and place it over the top of the filling. Gently press the edges around the dish to seal.
Cut a few small slits in the pastry to allow steam to escape.
6. Add the Egg Wash
Whisk the egg with 1 tablespoon of water.
Brush the puff pastry generously with the egg wash.
If desired, sprinkle a little Parmesan and dried thyme over the top.
7. Bake
Place the dish on a baking sheet to catch any bubbling sauce.
Bake for 20–25 minutes, or until the puff pastry is puffed and deeply golden.
If the pastry browns too quickly, loosely cover it with foil for the remaining baking time.
8. Rest and Serve
Allow the bake to rest for 5–10 minutes before serving.
The filling will thicken slightly as it cools, making it easier to spoon underneath that gorgeous flaky pastry.
My Tips
- Cook the mushrooms until their moisture has evaporated before adding the flour.
- Don’t pour the broth in all at once; adding it gradually helps create a smooth sauce.
- Let the filling cool for a few minutes before covering it with puff pastry.
- Keep puff pastry cold until you’re ready to use it for the best rise.
- Don’t skip the egg wash—it gives the pastry that beautiful golden finish.
- Place the baking dish on a sheet pan in case the creamy filling bubbles over.
Easy Variations
Chicken & Spinach: Add 2 cups of fresh spinach to the filling just before removing it from the heat.
Garlic Herb Version: Add fresh rosemary, thyme, and extra garlic.
Cheesy Chicken Bake: Stir ½ cup shredded mozzarella or Gruyère into the filling.
Vegetable Version: Add carrots, peas, celery, or broccoli.
Turkey Version: Replace the chicken with leftover cooked turkey for a delicious post-holiday meal.
What to Serve With It
Because the filling is rich and creamy, I love serving this bake with something fresh and simple.
Try it with:
- Green salad
- Roasted asparagus
- Steamed broccoli
- Green beans
- Cucumber and tomato salad
- Roasted carrots
- Light vegetable soup
A crisp salad with lemon dressing is especially good alongside the creamy filling.
Make-Ahead & Storage
The creamy chicken and mushroom filling can be prepared 1 day ahead and refrigerated.
For the best pastry texture, add the puff pastry just before baking.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in a 350°F (175°C) oven until hot. An air fryer can also help bring some crispness back to the pastry.

Frequently Asked Questions
Can I use rotisserie chicken?
Yes. Shredded rotisserie chicken works very well. Add it to the creamy mushroom sauce near the end rather than cooking it from raw.
Can I prepare this casserole ahead of time?
Yes. Make the filling ahead and refrigerate it. Add the puff pastry shortly before baking so it stays flaky and rises properly.
Can I use frozen puff pastry?
Yes. Thaw it according to the package directions, but keep it chilled until you’re ready to cover the filling.
How do I keep the puff pastry crispy?
Make sure the filling isn’t extremely hot or watery when you add the pastry. Bake at a properly preheated temperature and avoid covering the finished pastry after baking.
