Crispy Air Fryer Chicken Bites

Last weekend, I was craving something crispy and comforting but didn’t want to deal with a big pot of oil. I had some chicken breasts in the fridge, so I cut them into bite-sized pieces, seasoned them well, and let the air fryer do the work.

They came out golden and crunchy on the outside while staying juicy inside. My family loved dipping them into a creamy sauce, and honestly, there wasn’t much left by the time dinner was over. This is now one of my favorite quick recipes for busy evenings, game days, or whenever a crispy chicken craving hits.

Why You’ll Love This Recipe

  • Crispy without deep-frying
  • Juicy and tender inside
  • Ready in about 25 minutes
  • Simple ingredients
  • Perfect for dipping, wraps, salads, or meal prep

Ingredients

  • 1½ lbs boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tbsp all-purpose flour
  • 1 large egg
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • Cooking spray or a little olive oil

Instructions

1. Cut the Chicken

Pat the chicken breasts dry and cut them into bite-sized pieces, approximately 1–1½ inches each.

2. Prepare the Coating

In one bowl, combine the panko breadcrumbs, Parmesan, paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper.

Place the flour in a second bowl.

Beat the egg in a third bowl.

3. Coat the Chicken

Dip each chicken piece into the flour, then the beaten egg, and finally the seasoned Parmesan-panko mixture.

Press the coating gently onto the chicken so it sticks well.

4. Air Fry

Preheat the air fryer to 400°F (200°C) if your model requires preheating.

Lightly spray the basket with cooking spray. Arrange the chicken bites in a single layer, leaving space between the pieces.

Lightly spray the tops with oil.

Air fry for 10–14 minutes, turning halfway through, until golden and crispy and the chicken reaches 165°F (74°C) internally.

5. Serve

Let the chicken bites rest for a couple of minutes before serving.

Serve with ranch, honey mustard, garlic yogurt sauce, marinara, or your favorite dipping sauce.

My Tips

  • Don’t overcrowd the air fryer basket. Cook in batches if necessary.
  • Pat the chicken dry before coating so the breading sticks better.
  • A light spray of oil helps the coating become extra golden and crispy.
  • Cut the chicken pieces close to the same size so they cook evenly.
  • Don’t overcook them—the key to juicy chicken bites is stopping once they reach 165°F.

Easy Variations

Spicy Chicken Bites: Add cayenne pepper or chili powder to the breadcrumb mixture.

Garlic Parmesan: Add extra Parmesan and ½ teaspoon dried parsley.

Buffalo Style: Toss the cooked chicken bites with your favorite buffalo sauce.

Low-Carb: Replace the panko with crushed pork rinds or finely ground almond flour.

Mediterranean Style: Add oregano, parsley, garlic, and a little lemon zest to the coating.

Serving Ideas

These crispy chicken bites are great with a fresh salad, roasted vegetables, air-fryer potatoes, coleslaw, or tucked into a warm pita. They also make an easy appetizer for family gatherings and game nights.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days.

For the crispiest reheating, place them back in the air fryer at 375°F (190°C) for 3–5 minutes.

Frequently Asked Questions

Can I use chicken thighs?
Yes. Boneless, skinless chicken thighs work beautifully and tend to be extra juicy.

Can I freeze the chicken bites?
Yes. Freeze cooked bites in a single layer, then transfer them to a freezer-safe container. Reheat directly in the air fryer until hot and crispy.

Why isn’t my coating crispy?
Avoid overcrowding the basket and make sure you use a light coating of oil. Air needs to circulate around each piece.

Can I make these without Parmesan?
Yes. Simply increase the panko slightly and add extra herbs and spices for flavor.
