Crispy Caprese Chicken Cutlets with Tomatoes, Mozzarella & Basil!
Crispy Caprese Chicken Cutlets with Tomatoes, Mozzarella & Basil
I made these crispy chicken cutlets on a weekend when I wanted something that felt a little special without spending hours in the kitchen. I had some ripe tomatoes, fresh mozzarella, and basil waiting to be used, so I decided to turn them into a Caprese-inspired chicken dinner.
The chicken came out beautifully golden and crisp, then I topped it with melted mozzarella, juicy tomatoes, and plenty of fresh basil. A drizzle of the flavorful pan juices over everything made this one of those dinners my family kept talking about after the plates were empty.

Ingredients
For the Chicken
4 boneless, skinless chicken breasts
½ cup all-purpose flour
2 large eggs
1 cup Italian-seasoned breadcrumbs
¼ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp paprika
½ tsp salt
½ tsp black pepper
2–3 tbsp olive oil
For the Caprese Topping
1½ cups cherry tomatoes, halved
8 oz fresh mozzarella, sliced
¼ cup fresh basil, thinly sliced
1 garlic clove, minced
1 tbsp olive oil
1 tsp balsamic glaze, optional
Salt and black pepper, to taste
For Finishing
2 tbsp fresh parsley, chopped
Extra basil
Lemon wedges, optional
Instructions
1. Prepare the Chicken
Place the chicken breasts between two pieces of plastic wrap and gently pound them to an even thickness of about ½ inch.
Pat the chicken dry with paper towels and season lightly with salt and pepper.
2. Set Up the Coating
Place flour in one shallow bowl.
Beat the eggs in a second bowl.
In a third bowl, combine the breadcrumbs, Parmesan, garlic powder, Italian seasoning, paprika, salt, and black pepper.
3. Bread the Chicken
Dip each chicken cutlet into the flour, shaking off the excess.
Then dip it into the beaten eggs before pressing it into the seasoned breadcrumb mixture.
Make sure both sides are well coated.
4. Cook Until Golden
Heat the olive oil in a large skillet over medium heat.
Add the breaded chicken and cook for about 4–5 minutes per side, depending on thickness, until deeply golden and cooked through.
The chicken should reach 165°F (74°C) in the thickest part.
Transfer the cooked chicken to a plate.
5. Prepare the Tomato Topping
While the chicken cooks, toss the halved tomatoes with olive oil, minced garlic, a little salt, and black pepper.
Stir in the fresh basil just before serving.
6. Add the Mozzarella
Place slices of fresh mozzarella over the hot chicken cutlets.
Cover the skillet for 1–2 minutes, or place the chicken under a broiler briefly, until the mozzarella is soft and melted.
7. Finish the Chicken
Spoon the tomato and basil mixture generously over each chicken cutlet.
Sprinkle with fresh parsley and basil.
For an extra burst of flavor, drizzle a small amount of balsamic glaze over the top.
Serve immediately while the chicken is crisp and the mozzarella is warm and melty.
My Tips
Pounding the chicken evenly is one of the best ways to make sure it cooks quickly and stays juicy.
Don’t overcrowd the skillet. Cook the chicken in batches if necessary so the coating can become properly crisp.
For the best Caprese flavor, use ripe tomatoes and fresh mozzarella.
Add the basil at the end so it stays fresh and fragrant rather than becoming dark and wilted.
If you want the chicken extra crispy, use panko breadcrumbs instead of traditional breadcrumbs.
Easy Variations
Air Fryer Version: Spray the breaded chicken lightly with olive oil and air fry at 400°F (200°C) for about 10–14 minutes, flipping halfway through. Add the mozzarella during the final 1–2 minutes.
Low-Carb: Replace the breadcrumbs with crushed pork rinds mixed with Parmesan and Italian seasoning.
Spicy: Add red pepper flakes to the breadcrumb mixture or tomato topping.
Pesto Caprese Chicken: Spread a thin layer of basil pesto over the chicken before adding the mozzarella and tomatoes.
Baked Version: Place the breaded chicken on a lightly greased baking sheet and bake at 425°F (220°C) until golden and the chicken reaches 165°F.
What to Serve With It
I love serving these chicken cutlets with roasted vegetables, a simple arugula salad, garlic green beans, or crispy potatoes.
For a lighter Mediterranean-style meal, serve them with cucumber, tomato, olives, and a lemony green salad.
A little crusty bread on the side is also perfect for soaking up the delicious juices.
Make-Ahead & Storage
The chicken can be breaded several hours ahead and refrigerated until you’re ready to cook it.
Store leftover cooked chicken in an airtight container in the refrigerator for up to 3–4 days.
For the best texture, reheat the chicken in an air fryer or oven at 350°F (175°C) until hot. Add fresh tomatoes and basil after reheating.

Frequently Asked Questions
Can I use chicken thighs instead of breasts?
Yes. Boneless, skinless chicken thighs work well, although they may require a little more cooking time depending on their thickness.
Can I make this in the air fryer?
Absolutely. Air frying gives the breaded chicken a wonderfully crisp exterior while using less oil. Cook at 400°F and check that the chicken reaches 165°F internally.
Can I use shredded mozzarella?
Yes, although fresh mozzarella slices give the dish a softer, creamier Caprese-style topping.
Can I make this recipe without breading the chicken?
Yes. Simply season and pan-sear or bake the chicken, then add the mozzarella, tomatoes, and basil for a lighter version.
