Instructions
Step 1: Season the Chicken

Place the chicken pieces in a bowl.

Add oregano, paprika, garlic powder, salt, and black pepper. Toss until evenly coated.

Step 2: Brown the Chicken

Heat 1 tablespoon olive oil in a large skillet over medium-high heat.

Add the chicken and cook for about 4–5 minutes, stirring occasionally, until lightly browned.

The chicken doesn’t need to be completely cooked yet.

Transfer it to a plate.

Step 3: Sauté the Vegetables

Add the remaining olive oil to the same skillet.

Add the onion, zucchini, and bell pepper.

Cook for 4–5 minutes, until they begin to soften.

Add the garlic and cook for another 30 seconds.

Step 4: Add the Orzo

Stir the dry orzo into the vegetables.

Toast it gently for about 1 minute.

Add the chicken broth, oregano, Italian seasoning, and lemon zest.

Stir well.

Step 5: Simmer

Return the chicken to the skillet.

Bring everything to a gentle simmer.

Cover and cook for approximately 10–12 minutes, stirring occasionally so the orzo doesn’t stick.

Cook until the orzo is tender and most of the liquid has been absorbed.

Step 6: Add the Fresh Ingredients

Stir in the cherry tomatoes and spinach.

Cook for another 2–3 minutes, until the spinach wilts and the tomatoes soften slightly.

Step 7: Finish With Lemon

Turn off the heat.

Stir in the fresh lemon juice and Parmesan.

Taste and adjust the salt and pepper.

Sprinkle with fresh parsley before serving.
