Mediterranean Chickpea & Cranberry Salad with Feta!
Mediterranean Chickpea & Cranberry Salad with Feta
I made this salad last weekend when I wanted something fresh, filling, and colorful without spending much time in the kitchen. I had chickpeas, a little feta, and some dried cranberries in the pantry, so I decided to throw them together with fresh vegetables and a lemony dressing.
It turned out to be one of those recipes that everyone kept going back for. The creamy feta, sweet cranberries, hearty chickpeas, crunchy vegetables, and bright Mediterranean dressing work so well together. I’ve already made it again because it’s perfect for lunch, meal prep, or a simple side dish.
Why You’ll Love This Recipe
- Fresh, colorful, and satisfying
- Naturally high in fiber and plant-based protein
- Sweet cranberries balance the salty feta
- Bright Mediterranean-inspired flavors
- Great for lunch, picnics, or meal prep
Ingredients
For the Salad
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- ½ cup dried cranberries
- ½ cup crumbled feta cheese
- ¼ cup Kalamata olives, sliced
- ¼ cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
For the Dressing
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp red wine vinegar
- 1 garlic clove, minced
- 1 tsp dried oregano
- ½ tsp Dijon mustard
- ¼ tsp black pepper
- Salt, to taste
Instructions
1. Prepare the Chickpeas
Drain and rinse the chickpeas thoroughly. Pat them dry with a clean kitchen towel to remove excess moisture.
2. Chop the Vegetables
Add the cucumber, cherry tomatoes, red onion, Kalamata olives, parsley, and mint to a large bowl.
3. Make the Dressing
Whisk together the olive oil, lemon juice, red wine vinegar, garlic, oregano, Dijon mustard, black pepper, and salt until well combined.
4. Combine Everything
Add the chickpeas and dried cranberries to the vegetables. Pour the dressing over everything and gently toss.
5. Add the Feta
Fold in the crumbled feta carefully so it doesn’t completely break apart.
For the best flavor, let the salad rest in the refrigerator for 15–20 minutes before serving.
My Tips
- Rinse the chickpeas well to remove excess liquid and improve their flavor.
- Add the feta near the end so it stays in nice pieces.
- For extra crunch, add toasted almonds or walnuts.
- If making the salad ahead, reserve a little dressing and add it just before serving.
- Taste before adding extra salt because the feta and olives are already salty.
Easy Variations
Extra Protein: Add grilled chicken, tuna, or boiled eggs.
More Mediterranean: Add roasted red peppers, artichoke hearts, or sun-dried tomatoes.
Creamy Version: Add a spoonful of Greek yogurt to the dressing.
Lower-Carb: Reduce the chickpeas and add extra cucumber, tomatoes, leafy greens, and bell peppers.
Serving Ideas
Serve this salad on its own for a light lunch or alongside grilled chicken, baked fish, salmon, or roasted vegetables. It also makes a beautiful addition to a Mediterranean-style dinner table.
Storage
Store in an airtight container in the refrigerator for up to 3–4 days. The flavors actually become even better after sitting for a few hours.

Frequently Asked Questions
Can I make this salad ahead of time?
Yes. It’s an excellent make-ahead salad. Prepare it several hours before serving and keep it refrigerated.
Can I use fresh cranberries instead of dried?
Dried cranberries work best because they provide the sweet contrast this salad needs. Fresh cranberries are much more tart.
Can I use another cheese instead of feta?
Yes. Goat cheese or a mild crumbled cheese can work well, although feta gives it the classic Mediterranean flavor.
Is this salad good for meal prep?
Yes. Keep it refrigerated in individual containers and add extra dressing just before eating if needed.
