One-Pan Garlic Herb Chicken with Potatoes & Green Beans

Some of my favorite dinners are the ones that don’t require a sink full of dishes afterward. One-Pan Garlic Herb Chicken with Potatoes & Green Beans is exactly that kind of recipe.

I made this for my family last weekend on one of those evenings when everyone was hungry, but I didn’t feel like spending hours in the kitchen. I had chicken, a few potatoes, and fresh green beans, so I decided to put everything on one pan and let the oven do the work.

4 boneless, skinless chicken breasts or 4 chicken thighs
1 lb baby potatoes, halved
12 oz fresh green beans, trimmed

Instructions
1. Prepare the Oven

Preheat your oven to 425°F (220°C).

3. Season the Chicken

While the potatoes start cooking, rub the chicken with 1 tablespoon olive oil.

Season with the remaining garlic, rosemary, thyme, paprika, black pepper, and lemon zest.

4. Add the Chicken

Remove the pan from the oven.

Move the potatoes slightly to make room for the chicken.

Place the chicken on the pan and return everything to the oven.

Roast for approximately 15–20 minutes, depending on the thickness of the chicken.

5. Add the Green Beans

Toss the green beans with the remaining tablespoon of olive oil and a small pinch of salt and pepper.

Add them to the sheet pan during the final 10–12 minutes of cooking.

Continue roasting until the potatoes are golden, the green beans are tender, and the chicken reaches 165°F (74°C) internally.

6. Finish With Lemon

Remove everything from the oven.

Drizzle the chicken and vegetables with fresh lemon juice.

Sprinkle with chopped parsley and serve warm.

Similar-sized pieces cook at the same rate.

Give the potatoes a head start.
They take longer than the green beans, so roasting them first gives you perfectly cooked vegetables.

Don’t overcrowd the pan.
Leave some space between the ingredients so they roast instead of steam.

Use a thermometer for the chicken.
The thickest part should reach 165°F.

Add lemon at the end.
Fresh lemon juice brightens the garlic and herbs beautifully.
