Slow Cooker Cheesy Stuffed Shells

Last weekend, I was in the mood for something cheesy and comforting, but I really didn’t want to spend hours in the kitchen. I decided to try making stuffed shells in the slow cooker, and it was such a cozy little dinner win.

The shells turned out tender, creamy, and packed with cheesy goodness, all covered in a rich tomato sauce. My family loved it so much that there were hardly any leftovers. It’s now one of those recipes I’d happily make on a busy weekday or a relaxed Sunday.

Why You’ll Love This Recipe
Creamy, cheesy filling in every bite
Easy slow-cooker preparation
No complicated cooking process
Perfect for family dinners
Great for make-ahead meals
Ingredients
For the Shells
20–24 jumbo pasta shells
15 oz ricotta cheese
1½ cups shredded mozzarella cheese, divided
½ cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp dried basil
½ tsp salt
¼ tsp black pepper
2 tbsp chopped fresh parsley
For the Sauce
24 oz marinara sauce
½ cup water
1 tsp Italian seasoning
½ tsp garlic powder
¼ tsp red pepper flakes, optional
Instructions
1. Prepare the Pasta Shells

Cook the jumbo shells according to the package directions until just slightly underdone. They should be firm enough to handle without falling apart.

Drain and let them cool enough to handle.

2. Make the Cheese Filling

In a large bowl, combine the ricotta, 1 cup mozzarella, Parmesan, egg, garlic, Italian seasoning, basil, salt, pepper, and parsley.

Mix until creamy and well combined.

3. Prepare the Slow Cooker

Spread about 1 cup of marinara sauce over the bottom of the slow cooker.

Add ½ cup water to the remaining sauce and stir. The extra liquid helps the pasta cook properly in the slow cooker.

4. Stuff the Shells

Carefully spoon the cheese mixture into each cooked shell.

Arrange the stuffed shells seam-side up in the slow cooker. Depending on the size of your slow cooker, you may need to create one or two layers.

5. Add the Sauce

Pour the remaining marinara sauce evenly over the stuffed shells, making sure the shells are well covered.

Sprinkle the remaining ½ cup mozzarella over the top.

6. Slow Cook

Cover and cook on LOW for 3–4 hours, or until the shells are tender and the cheese is melted and bubbly.

Avoid cooking them much longer than necessary because the pasta can become too soft.

7. Serve

Let the stuffed shells sit for about 5–10 minutes before serving.

Finish with fresh parsley and a little extra Parmesan if desired.

My Tips
Don’t overcook the shells before stuffing them. Slightly firm shells are much easier to work with.
Use a good-quality marinara sauce because it makes up a big part of the flavor.
If your shells tear while stuffing, don’t worry—just use another shell.
Don’t skip the small amount of water in the sauce; it helps create enough moisture for slow-cooker cooking.
Keep the lid closed as much as possible while the shells cook.
Let the finished dish rest briefly before serving so the cheese filling can set.
Easy Variations

Spinach & Cheese Shells: Add 1 cup finely chopped cooked spinach to the ricotta mixture.

Meaty Stuffed Shells: Brown ½ lb ground beef or Italian sausage, drain well, and layer it with the shells and sauce.

Extra Cheesy: Add shredded provolone or fontina to the cheese mixture.

Spicy Version: Add crushed red pepper flakes to the filling and marinara sauce.

Chicken Stuffed Shells: Mix finely shredded cooked chicken into the ricotta filling for extra protein.

What to Serve With It

These cheesy shells are delicious with a simple side salad and garlic bread. I also love serving them with roasted broccoli, green beans, or a fresh tomato and cucumber salad.

Make-Ahead Instructions

You can assemble the stuffed shells up to 24 hours ahead. Cover the slow-cooker insert tightly and refrigerate it.

When ready to cook, let the chilled insert sit out briefly while the slow cooker comes to temperature according to the manufacturer’s guidance. Then cook until the shells are hot, tender, and fully heated through.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

Reheat individual portions in the microwave or gently in the oven until hot.

For freezing, allow the cooked shells to cool completely before placing them in a freezer-safe container. Freeze for up to 2–3 months.

Frequently Asked Questions

Can I use cottage cheese instead of ricotta?
Yes. Cottage cheese can be blended until smooth and used as a ricotta substitute.

Do I have to boil the shells first?
For this version, yes. Par-cooking the shells makes them easier to stuff and helps ensure they cook evenly in the slow cooker.

Can I use frozen stuffed shells?
It’s possible, but the cooking time will be longer and the texture may vary. For the most reliable result, use freshly assembled shells.

Can I add meat to the filling?
Absolutely. Cooked ground beef, Italian sausage, or shredded chicken can be mixed into the cheese filling for a heartier meal.
