Last weekend, I wanted something comforting but still simple enough for a family dinner, so I made these creamy stuffed chicken breasts. A friend had suggested adding garlic and spinach to the filling, and I knew I had to try it.

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil

Instructions

1. Prepare the Filling

Heat olive oil in a skillet over medium heat. Add the minced garlic and cook for about 30 seconds.

Add the chopped spinach and cook until wilted. Remove from the heat and let it cool slightly.

Mix the spinach with cream cheese, mozzarella, Parmesan, Italian seasoning, black pepper, and a small pinch of salt.

2. Prepare the Chicken

Pat the chicken breasts dry. Carefully cut a pocket horizontally into the thickest part of each breast, being careful not to cut all the way through.

Season the chicken inside and outside with olive oil, Italian seasoning, paprika, garlic powder, salt, and black pepper.

3. Stuff the Chicken

Divide the creamy spinach mixture evenly between the chicken breasts. Gently press the opening together.

If needed, secure the edges with toothpicks.

4. Cook

Heat a little olive oil in an oven-safe skillet over medium-high heat.

Sear the stuffed chicken for about 2–3 minutes per side until golden.

Transfer the skillet to a preheated 375°F (190°C) oven and bake for approximately 18–25 minutes, depending on the thickness of the chicken.

The chicken should reach 165°F (74°C) in the thickest part.

5. Rest & Serve

Let the chicken rest for 5 minutes before slicing. This helps keep the juices inside and gives the cheesy filling time to settle.
