Avocado, Egg & Spinach Salad
Some salads are so simple that you wonder why you didn’t make them sooner. This Avocado, Egg & Spinach Salad is one of those recipes for me.
I first made it on a weekend when I wanted something fresh for lunch but didn’t feel like cooking anything complicated. I had a couple of boiled eggs, a ripe avocado, and some fresh spinach in the refrigerator. I tossed everything together with a simple lemon-herb dressing, and it turned into one of the most satisfying salads I’ve made in a while.
The creamy avocado, tender eggs, and fresh spinach work so well together. I made it again for my family, and everyone loved how fresh and filling it was. Now it’s one of my favorite choices when I’m busy, trying to keep lunch light, or simply craving something nutritious without spending much time in the kitchen.

My Tips for the Best Avocado Egg Salad
Don’t overcook the eggs.
A creamy yellow center makes this salad much more delicious.
Add avocado last.
This keeps the pieces intact instead of turning the salad into a mash.
Dress right before serving.
The spinach stays fresher and the avocado is less likely to brown.
Use fresh lemon juice.
It brightens the creamy avocado and makes the whole salad taste fresher.
Diabetes-Inspired Version
This salad can be a great choice for a diabetes-conscious meal because it contains protein from the eggs, healthy fats from avocado and olive oil, and fiber-rich vegetables.
For a balanced meal:
Keep the salad mostly non-starchy vegetables.
Use plain, unsweetened dressings.
Avoid sugary salad toppings.
Add grilled chicken or salmon if you want more protein.
If you want carbohydrates, pair it with a small portion of beans or a high-fiber whole grain.
Individual carbohydrate needs vary, so portion sizes should fit your personal meal plan.
Mediterranean-Inspired Twist
To give this salad even more Mediterranean flavor, add:
Crumbled feta
Kalamata olives
Cherry tomatoes
Fresh dill
Oregano
Cucumber
Extra virgin olive oil
Fresh lemon juice
A little feta and oregano on top is especially delicious with the creamy avocado and eggs.
What to Serve With It
This salad pairs nicely with:
Grilled chicken breast
Baked salmon
Mediterranean cod
Grilled shrimp
Lentil soup
Vegetable soup
Whole-grain toast
Storage
For the best texture, store the ingredients separately when possible.
The boiled eggs can be refrigerated for several days, while the salad is best assembled fresh.
If storing assembled salad, keep it refrigerated and enjoy within 1 day, especially because avocado and spinach can lose their freshness.

Frequently Asked Questions
Can I make this salad ahead of time?
You can prepare the eggs, vegetables, and dressing ahead of time, but add the avocado and dressing just before serving.
Can I add chicken?
Absolutely. Grilled chicken makes this a more substantial high-protein meal.
Can I use another leafy green?
Yes. Romaine, arugula, mixed greens, or kale can all work.
Can I add cheese?
Feta is my favorite, but goat cheese or a small amount of Parmesan also works well.
Can I make the dressing without mustard?
Yes. Simply increase the lemon juice slightly and whisk well with the olive oil and herbs.
Is this good for a diabetes-conscious diet?
It can be an excellent option because it is relatively low in carbohydrates and provides protein, fiber, and healthy fats. Keeping added sugars out of the dressing and choosing appropriate portions can help it fit into a balanced diabetes-conscious meal.
