Mediterranean Ground Beef, Zucchini & Tomato Skillet
There are evenings when I want something hearty and comforting, but I also want dinner to be simple enough that I don’t spend the whole night in the kitchen. This Mediterranean Ground Beef, Zucchini & Tomato Skillet has become one of my favorite meals for those days.
I first made it on a busy weekend when I had some ground beef and a few vegetables that needed to be used. I added zucchini, cherry tomatoes, red onion, garlic, and Mediterranean herbs, then finished everything with creamy feta.
The smell while it cooked was incredible. The beef became beautifully browned, the zucchini softened just enough, and the tomatoes became juicy and slightly sweet. When I sprinkled the feta over the top, my family immediately came into the kitchen to see what I was making!

Beef & Vegetables
1 pound lean ground beef
2 medium zucchini, sliced into half-moons
1½ cups cherry tomatoes, halved
½ medium red onion, diced
3 garlic cloves, minced
½ cup Kalamata olives, sliced
1 tablespoon extra virgin olive oil
1 teaspoon dried oregano
1 teaspoon paprika
½ teaspoon dried thyme
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon red pepper flakes, optional
Finishing
½ cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, optional
1 tablespoon fresh lemon juice
Instructions
Step 1: Brown the Beef
Heat a large skillet over medium-high heat.
Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon as it cooks.
Cook until browned and no longer pink.
If there is a lot of excess grease, carefully drain some of it.
Step 2: Add the Onion & Garlic
Add the olive oil and diced red onion.
Cook for 2–3 minutes, until the onion begins to soften.
Add the minced garlic and cook for another 30 seconds.
Step 3: Add the Zucchini
Add the sliced zucchini.
Season with oregano, paprika, thyme, salt, black pepper, and red pepper flakes if using.
Cook for 5–6 minutes, stirring occasionally, until the zucchini is tender but still has some bite.
Step 4: Add the Tomatoes & Olives
Stir in the cherry tomatoes and Kalamata olives.
Cook for another 3–4 minutes.
The tomatoes should soften and release some of their juices without completely breaking apart.
Step 5: Finish With Feta
Turn off the heat.
Sprinkle the feta cheese and fresh parsley over the skillet.
Add fresh dill and a squeeze of lemon juice.
Serve warm.
My Tips for the Best Skillet
Brown the beef well.
Allowing the beef to develop some color adds much more flavor than simply steaming it.
Don’t overcook the zucchini.
You want it tender but not mushy.
Use cherry tomatoes.
They become wonderfully juicy while still holding their shape.
Add feta at the end.
Keeping it off the heat preserves its creamy, crumbly texture.
Finish with lemon.
A little acidity brightens all those rich Mediterranean flavors.
