Crispy Fryer Garlic Herb Potatoes
There are few things I love more than potatoes that come out of the air fryer with those beautifully golden, crispy edges. Crispy Air Fryer Garlic Herb Potatoes have become one of my favorite easy side dishes because they taste like I spent much more time making them than I actually did.
I made these last weekend when I was putting together a simple family dinner. I had some baby potatoes on hand, so I sliced them, tossed them with olive oil, garlic, and herbs, and popped them into the air fryer.

1½ lbs baby potatoes or Yukon Gold potatoes
2 tablespoons extra virgin olive oil
3 cloves garlic, finely minced
1 teaspoon dried Italian seasoning
½ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon black pepper
¼ teaspoon salt

1 tablespoon grated Parmesan, optional
1 teaspoon fresh lemon juice, optional
Instructions
1. Prepare the Potatoes
Wash the potatoes well and pat them completely dry.
Cut them in half. If they’re large, cut them into quarters so the pieces are similar in size.
For extra-crispy potatoes, soak the cut potatoes in cold water for 15–20 minutes, then drain and dry very thoroughly.
2. Season
Add the potatoes to a large bowl.
Pour in the olive oil and add garlic, Italian seasoning, paprika, oregano, black pepper, and salt.
Toss until everything is evenly coated.
3. Preheat the Air Fryer
Preheat your air fryer to 400°F (200°C) for about 3 minutes.
4. Air Fry
Arrange the potatoes in a single layer in the air fryer basket.
Cook for 18–24 minutes, shaking the basket every 6–7 minutes.
Continue cooking until the potatoes are golden brown and crisp on the outside and tender inside.
5. Finish
Transfer the hot potatoes to a serving bowl.
Sprinkle with fresh parsley and Parmesan, if using.
Add a small squeeze of lemon juice for a fresh finish.
Serve immediately.
My Tips for the Crispiest Potatoes
Dry them well. If the potatoes are wet, they’ll steam instead of becoming crispy.
Don’t overcrowd the basket. Cook in batches if necessary.
Shake during cooking. This helps every side develop that delicious golden crust.
Use baby or Yukon Gold potatoes. They become wonderfully creamy inside while crisping beautifully outside.
Add fresh garlic carefully. If your garlic tends to burn in your air fryer, use garlic powder during cooking and add fresh minced garlic during the final few minutes.
