A Fryer Potatoes

Some recipes are so simple that they become the ones you make over and over again. A Fryer Potatoes are definitely that kind of recipe in my kitchen.

I made these last weekend when my family wanted something crispy to go with dinner, but I didn’t feel like turning on the oven. I grabbed a few baby potatoes, tossed them with olive oil, garlic, paprika, and herbs, and let the air fryer do all the work.

A few minutes later, the kitchen smelled amazing. The potatoes came out golden and crispy on the outside while staying soft and fluffy inside. Everyone loved them, and there were definitely a few hands reaching for the last pieces before dinner was even served!

Ingredients
1½ lbs baby potatoes
1½ tablespoons extra virgin olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
½ teaspoon onion powder
½ teaspoon black pepper
¼ teaspoon salt
1 tablespoon fresh parsley, chopped
1 teaspoon fresh lemon juice, optional
Instructions
1. Prepare the Potatoes

Wash the potatoes thoroughly and pat them dry.

Cut larger potatoes in half or quarters so that all the pieces are roughly the same size.

2. Season

Place the potatoes in a large bowl.

Add olive oil, garlic powder, paprika, oregano, onion powder, black pepper, and salt.

Toss until every potato is evenly coated.

3. Preheat the Air Fryer

Preheat your air fryer to 400°F (200°C) for about 3 minutes.

4. Air Fry

Place the potatoes in the basket in a single layer. Avoid overcrowding.

Air fry for 18–24 minutes, shaking the basket every 6–7 minutes.

They’re ready when the outside is golden and crisp and a fork slides easily into the center.

5. Finish

Transfer the potatoes to a serving bowl.

Sprinkle with fresh parsley and, if desired, add a squeeze of lemon juice.

Serve immediately.

My Tips for Extra-Crispy Potatoes

Dry the potatoes well. Excess moisture can prevent proper browning.

Don’t overcrowd the basket. Give the hot air room to circulate.

Cut them evenly. This helps everything finish cooking at the same time.

Shake the basket. Moving the potatoes several times helps them brown on all sides.

For extra crispiness: Soak cut potatoes in cold water for 15–20 minutes, drain, and dry them extremely well before seasoning.

Diabetes-Conscious Option

Potatoes are nutritious but are still a significant source of carbohydrates. For a more balanced diabetes-conscious meal:

Keep the serving moderate.
Pair the potatoes with grilled chicken, fish, eggs, or another protein.
Add plenty of non-starchy vegetables.
Avoid sugary sauces.
Consider replacing part of the potatoes with cauliflower or broccoli.

A simple combination of ½ potatoes + ½ cauliflower is one of my favorite ways to lower the carbohydrate content while keeping the crispy texture.
