Some recipes have a way of bringing everyone into the kitchen before dinner is even ready. Crispy Breaded Eggplant with Marinara is one of those recipes for me.

I made this last weekend when I had a couple of eggplants sitting in the kitchen and wanted to turn them into something my whole family would actually get excited about. I sliced them, coated them in a seasoned Parmesan breadcrumb mixture, and cooked them until beautifully golden and crisp.

Ingredients
For the Eggplant
2 medium eggplants
1 cup Italian-seasoned breadcrumbs
½ cup grated Parmesan cheese
2 large eggs
2 tablespoons milk
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
½ teaspoon paprika
½ teaspoon black pepper
¼ teaspoon salt
Olive oil spray or 1–2 tablespoons olive oil
For the Marinara
1½ cups crushed tomatoes or marinara sauce
2 garlic cloves, minced
1 tablespoon extra virgin olive oil
½ teaspoon dried oregano
¼ teaspoon black pepper
Fresh basil, optional
Pinch of red pepper flakes, optional
Instructions
1. Slice the Eggplant

Wash the eggplants and trim off the ends.

Slice into rounds about ¼–½ inch thick.

If your eggplant is particularly large or bitter, lightly sprinkle the slices with salt and let them sit for 15–20 minutes. Pat them dry with paper towels.

2. Prepare the Coating

In one shallow bowl, whisk together the eggs and milk.

In another bowl, combine the breadcrumbs, Parmesan, garlic powder, Italian seasoning, paprika, black pepper, and salt.

3. Coat the Eggplant

Dip each eggplant slice into the egg mixture, allowing the excess to drip off.

Press it into the breadcrumb mixture, coating both sides well.

Place the coated slices on a plate or baking sheet.

4. Cook Until Golden

For an air fryer, lightly spray the basket and arrange the eggplant in a single layer.

Lightly spray the tops with olive oil.

Air fry at 400°F (200°C) for 10–14 minutes, flipping halfway through, until golden and crisp.

For an oven, place the slices on a parchment-lined baking sheet and bake at 425°F (220°C) for about 20–25 minutes, flipping halfway through.

5. Make the Marinara

While the eggplant cooks, heat olive oil in a small saucepan.

Add garlic and cook for about 30 seconds.

Add marinara or crushed tomatoes, oregano, black pepper, and red pepper flakes.

Simmer gently for 8–10 minutes.

6. Serve

Arrange the crispy eggplant on a serving plate.

Sprinkle with a little extra Parmesan and fresh basil.

Serve immediately with warm marinara sauce for dipping.

My Tips for Extra-Crispy Eggplant

Don’t cut the slices too thick. Thinner slices cook more evenly and develop a better crispy coating.

Pat salted eggplant dry. This removes excess moisture before breading.

Press the breadcrumbs firmly onto each slice. This helps create that delicious crunchy crust.

Don’t overcrowd the air fryer. Cook in batches if necessary.

Serve right away. The coating is at its crispiest straight from the oven or air fryer.

Lower-Carb Option

If you’re watching carbohydrates, you can easily change the coating.

Replace the breadcrumbs with:

Finely grated Parmesan
Almond flour
Crushed pork rinds
A mixture of Parmesan and almond flour

For an even simpler version, coat the eggplant with olive oil, Parmesan, garlic, oregano, and paprika, then air fry until golden.

Mediterranean-Inspired Version

For a Mediterranean twist, season the eggplant with:

Extra virgin olive oil
Oregano
Garlic
Paprika
Fresh parsley
Lemon zest
