Some side dishes are so easy that you find yourself making them again and again. Crispy Cheesy Fryer Potatoes became one of those recipes in my kitchen after I made them for my family one weekend.

Instructions
1. Prepare the Potatoes

For extra crispiness, soak the cut potatoes in cold water for 15–20 minutes, then drain and pat completely dry.
2. Season
Place the potatoes in a large bowl.
Add olive oil, garlic powder, Italian seasoning, paprika, black pepper, salt, and red pepper flakes.
Toss until evenly coated.
3. Add the Cheese
Sprinkle in about ⅓ cup of Parmesan and toss again.
Save the remaining Parmesan for later.
4. Air Fry
Preheat your air fryer to 400°F (200°C) for about 3 minutes.
Arrange the potatoes in a single layer. Avoid overcrowding the basket.
Air fry for 15–20 minutes, shaking the basket every 5–6 minutes.
5. Make Them Extra Cheesy
During the final 2–3 minutes, sprinkle the remaining Parmesan over the potatoes.
Continue air frying until the cheese is golden and crisp.
6. Finish & Serve
Transfer the potatoes to a serving bowl.
Sprinkle with fresh parsley and serve immediately.

Dry the potatoes really well. Moisture is the enemy of crispiness.
Don’t overcrowd the basket. Air needs to circulate around every piece.
Use finely grated Parmesan. It coats the potatoes better and creates a beautiful crispy crust.
Shake the basket. This helps the potatoes brown evenly.
