For the Salad
8 oz fresh mozzarella, cut into bite-sized pieces
1½ cups marinated artichoke hearts, drained and quartered
1½ cups cherry tomatoes, halved
½ cup Kalamata olives
½ small red onion, thinly sliced

3 tablespoons extra virgin olive oil
1½ tablespoons fresh lemon juice

½ teaspoon dried oregano
¼ teaspoon black pepper

Instructions
1. Prepare the Vegetables
Drain the artichoke hearts well and cut them into smaller pieces.
Add the artichokes, cherry tomatoes, cucumber, red onion, and Kalamata olives to a large bowl.
2. Add the Mozzarella
Add the mozzarella pieces, fresh basil, parsley, and pine nuts if using.
Gently toss everything together so the mozzarella doesn’t break apart.
3. Make the Dressing
In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, oregano, black pepper, and salt.
Taste and adjust the lemon or vinegar to your liking.
4. Dress the Salad
Pour the dressing over the salad.
Gently toss until everything is lightly coated.
5. Chill & Serve
Let the salad rest in the refrigerator for 15–20 minutes before serving.
Bring it out about 5 minutes before eating so the mozzarella can soften slightly and the flavors can come through.
